You can send me your idea for a quick look, but I should tell you right away that it would be a mistake to build any indirect-fired oven for family use. They are justified only for a non-stop bakery operations. Direct-fired oven is the best for all smaller scale operations simplicity, cost and functionality wise.
( und nach den Zeichnungen ) Jens, I cannot understand all the details, but as expected, way too complex, too large and too expensive for what you are trying to achieve. Forget about it and build a well-insulated direct-fired oven. You won't be able to eat all the oven can bake with stored heat if you build it and insulate it properly. here is a simple oven core you need:

you need minimum 20cm of rock wool or 10 ceramic wool + 10 rock wool all around before you do brick facing.
